Description
Crafted from vineyards situated on hilly terrain at an altitude of 150–180 meters near the upper course of the Iskar River. The breezy climate, minimal rainfall during ripening, and sandy-clay chernozem soil with leached carbonates create the ideal terroir for this traditional variety.
Harvest: Carefully hand-picked between September 15–25. The grapes are monitored daily to determine the optimal harvest moment. After harvesting, a secondary hand selection is performed before destemming.
Vinification: The fermentation process occurs in stainless steel tanks, followed by malolactic fermentation. The wine undergoes a short maceration and is unfiltered, with aging for 1 year in French oak barrels.
